You don't need the Chalice Dungeon gems to complete the game or DLC. They have sufficient gems to get you through. However, if you are doing an arcane build, then it is worth hitting the Chalice Dungeons because it takes the access to elemental gems in the main game is limited. Don't bother farming for gems until late game or the Chalice Dungeons.

It's a pain to farm dungeons offline. The biggest issue is that you can't use glyphs without PS+, which means you actually have to spend materials each time you want to create a dungeon.
